Cake:
1 white cake mix
1 - 12 oz. can (or 1.5 cups) diet soda
Mix together and bake as directed on the box.
Frosting:
1 - 8 oz. tub fat-free Cool Whip
1 pkg. sugar-free Jell-O
Mix together and spread over cooled cake.
(It's smart to coordinate the flavor of your diet soda choice and the sugar-free Jell-O.)
This is so good! I have had it at Josh's mom's house several times, and the other night I decided to make one at home. Jackie has used Waist Watcher black cherry soda and cherry Jell-O in the past. This was good, but I chose Sierra Mist Free as my soda and used orange Jell-O. Josh said it tastes kind of like a creamsicle. The cake does comes out thinner than if you baked it the traditional way; it's a bit denser. Surprisingly, it tastes just as good!
Oh, I almost forgot: 1/12 of the cake = 1 Weight Watchers point. If you make it in an 11x9 pan, that's quite a hefty piece! Hope you like it.
